Made with oat flour, eggs, and oat milk, lightly enriched with coconut oil, they’re naturally dairy-free, fluffy on the inside, and lightly crisp on the outside. Perfect for breakfast, a healthy snack, or to enjoy with a cup of tea.
In a large bowl, whisk together Eggs and Oat Milk.Â
Add melted Coconut Oil and stir well.
In a medium bowl, mix together Oat Flour and Baking Powder.
Gradually stir the dry ingredients into the wet ingredients until you get a smooth, thick Batter. Let it rest for 20 minutes so the Oats absorb some liquid.
Preheat your Waffle maker.
Pour a small amount of Batter into each section. Close the lid and cook for about 3–4 minutes, or until golden brown.
Let the Cookies cool slightly, then serve warm. Optionally sprinkle with Cinnamon, Cocoa, or Yogurt, and if using Yogurt, also add fresh or frozen Blueberries on top.
