Ingredients
    Ingredients for the Soup:
  • 500-1kg Beef with Bones
  • A little Parsley
  • 2 Carrots
  • 1-2 pieces Parsley Root
  • 2-3 pieces Celery Root
  • 1 Onion (halved)
  • 1 Celery Stalk
  • Salt and Pepper to taste
  • ½-1 Leek
  • Ingredients for the Dumplings:
  • 1 Egg ((separate Yolk and White))
  • A few TS Semolina
  • 1 TS Olive Oil
Instructions
  1. Prepare the Onion

    Cut the Onion in half and lightly roast both halves on a dry pan until golden brown on both sides.

  2. Prepare the Soup

    Place all the Soup Ingredients, including the roasted Onion, in a Pressure Cooker.
    Season with Salt and Pepper.

  3. Add enough Water to cover the ingredients and make them float.
    Heat on High until the Pressure Cooker whistles, then reduce to Low Heat and cook for 45 Minutes.

  4. Prepare the Dumplings

    Beat the Egg White until stiff peaks form.

  5. Gently fold in the Egg Yolk, mixing well.

  6. Add a few tablespoons of Semolina, mixing well.

  7. Add 1 Tablespoon Olive Oil, mix.

  8. Let the mixture rest for 30 Minutes.

  9. Finish the Soup

    Strain the Broth into a clean Pot, removing all Vegetables.

  10. Cook the Dumplings

    Drop small spoonfuls of the Dumpling Mixture into the simmering Soup.

  11. Let them cook on Low Heat for about 10 Minutes.

    Add freshly chopped Parsley.
