These delicious homemade tacos are a perfect combination of hearty and fresh flavors. Made with protein wraps, tender rind and pork meat, and topped with a refreshing salad mixed with creamy Greek yogurt, they are both satisfying and nutritious. Ingredients:
For the Tacos:
500 g Minced Meat (Beef, Pork, or Mixed)
1 Can of Red Beans (around 400 g), Rinsed and Drained
1 Can of Corn (around 300 g), Drained
1 Medium Onion, Finely Chopped
2 Cloves of Garlic, Finely Chopped
1 TS Paprika Powder
1/2 TS Cumin
Juice of 1 Lemon/Lime
Salt and Pepper to Taste
Butter for Frying
Tortillas (8-10 Pieces)
For the Salad:
1 Head of Lettuce, Finely Chopped
1 Red Pepper
100 g Grated Cheese (Cheddar, Feta, or Cheese of Your Choice)
200 g Greek Yogurt
- Juice of 1 Lemon/Lime
A Pinch of Salt and Pepper
Instructions:
Heat Butter in a large pan over medium heat. Add the Chopped Onion until softened.
Add Minced Meat and cook until browned, breaking it apart with a wooden spoon.
Stir in Garlic, Paprika Powder, and Cumin. Cook for 1-2 minutes until the spices release their aroma.
Mix in Beans and Corn, then cook for an additional 5-7 minutes until the flavors combine. Season with Salt, Pepper, and Lemon Juice. Remove from heat.
Combine Salad Chopped Lettuce and Grated Cheese in a large bowl.
Add Greek Yogurt, a pinch of Salt, and Pepper and mix gently.
Warm Tortillas in a pan or oven until soft and pliable.
Assemble Tacos: Place a layer of the Meat Mixture on each Tortilla, then top it with the Salad.
Serve immediately with your favorite sauces, such as Salsa or Guacamole. Enjoy!
