Cook the Pasta
Cook the Macaroni in Salted Water according to package instructions.
When the Water boils, cook 11 minutes on low heat.

Reserve a bit of the Pasta Water.

Sauté the Veggies
In a large pan, heat the Olive Oil. Add the Onion and Carrot and sauté for 5 minutes until softened.

Add Garlic
Stir in the Garlic and cook for another minute.

Brown the Meat
Add the Ground Meat and cook for 7 minutes until browned and broken into small pieces (no lumps).

Make the Sauce
Stir in the Tomato Paste, Tomato Passata, and Seasonings.

Simmer
Let the Sauce simmer on low heat for 20 minutes, stirring occasionally, until thickened and flavorful. Add reserved Pasta Water if needed.

Drain Macaroni.

Serve
Serve warm over the cooked Macaroni, topped with Grated Parmesan and Fresh Basil if desired.
