Whip the Egg Whites
Whip the Egg Whites until stiff peaks form.

Add Ground Almonds
Gently fold in the Ground Almonds and mix until well combined.

Bake the Cake Layer
Transfer the mixture to a baking tray and bake for 15 minutes at 180°C.

Make the Cream Mixture
In a separate bowl, mix the Egg Yolks with Erythritol, then add the Quark and stir until smooth and creamy.

Slice the Cake
Once the cake base is baked and cooled, cut it in half, then slice each half again to create four thin layers.

Assemble the First Layer
Place the first two layers in a serving dish, drizzle with 2 Espressos, and spread half of the Cream Mixture on top.

Add the remaining two cake layers, drizzle with the other 2 Espressos, and spread the rest of the Cream Mixture over the top.
