Instructions

Cook the Quinoa
Rinse Quinoa thoroughly under running Water.
Place it in a pot with double the amount of Water (e.g. 360 ml). Add a pinch of Salt.

Bring to a boil, then reduce heat and simmer for about 15 minutes until the Water is absorbed.
Cover and let rest for 5 minutes.

Prepare the Chicken
Cut the Chicken into bite-sized pieces.
Season with Salt, Pepper, and your favorite herbs.

Cook in a skillet with a little Olive Oil for 6–8 minutes until golden and cooked through.

Make the Tomato Sauce
Heat 1 TS Olive Oil in a skillet.
Sauté the Onion until soft, then add the Garlic.

Pour in the chopped Tomatoes.

And season with Oregano, Salt, Pepper and your favorite herbs.

Simmer for 10–15 minutes until the Sauce thickens.

Combine
In a large bowl, mix the cooked Quinoa, Chicken, and Tomato Sauce together.

Transfer the mixture to a baking dish and level it out.

Sprinkle the Cheese evenly on top.

Bake
Bake in a preheated oven at 180°C for 15–20 minutes, until the Cheese is melted and lightly golden.
