Preparing the pumpkin
Peel the Pumpkin, remove the Seeds, and cut the Flesh into bite-sized Cubes.

First baking
Place them in a Baking Tray, Drizzle with Olive Oil, and toss well to coat every piece.
Place the Tray in the oven preheated to 190°C and bake for 10 minutes. This initial roast helps the Pumpkin start softening.

Remove the Tray from the oven. Add the Thyme, Salt, and Pepper.

Crumble the Feta Cheese over the Pumpkin Cubes.

Final baking
Return the Tray to the oven and bake for another 30 minutes at 190°C.

The Pumpkin will become perfectly tender and the Feta will get a nice Golden Crust.

Take the Dish out of the oven and serve it while it’s still warm. It works perfectly as a light Vegetarian Meal or a Delicious Side Dish.
