Made with oat flour, eggs, and oat milk, lightly enriched with coconut oil, they’re naturally dairy-free, fluffy on the inside, and lightly crisp on the outside.   1. Mix Wet Ingredients

    In a large bowl, whisk together Eggs and Oat Milk.Ā 

  1. Add melted Coconut Oil and stir well.

  1. Mix Dry Ingredients

    In a medium bowl, mix together Oat Flour and Baking Powder.

  1. Combine Everything

    Gradually stir the dry ingredients into the wet ingredients until you get a smooth, thick Batter. Let it rest for 20 minutes so the Oats absorb some liquid.

  1. Cook The Cookies

    Preheat your Waffle maker.
    Pour a small amount of Batter into each section. Close the lid and cook for about 3–4 minutes, or until golden brown.

  1. Serve Warm

    Let the Cookies cool slightly, then serve warm. Optionally sprinkle with Cinnamon, Cocoa, or Yogurt, and if using Yogurt, also add fresh or frozen Blueberries on top.
