Tacos

These delicious homemade tacos are a perfect combination of hearty and fresh flavors. Made with protein wraps, tender rind and pork meat, and topped with a refreshing salad mixed with creamy Greek yogurt, they are both satisfying and nutritious. Perfect for a quick meal or a fun gathering, these tacos bring together the best of bold and balanced tastes!

Ingredients:

  • For the Tacos:

    • 500 g Minced Meat (Beef, Pork, or Mixed)

    • 1 Can of Red Beans (around 400 g), Rinsed and Drained

    • 1 Can of Corn (around 300 g), Drained

    • 1 Medium Onion, Finely Chopped

    • 2 Cloves of Garlic, Finely Chopped

    • 1 TS Paprika Powder

    • 1/2 TS Cumin

    • Juice of 1 Lemon/Lime

    • Salt and Pepper to Taste

    • Butter for Frying

    • Tortillas (8-10 Pieces)

    For the Salad:

    • 1 Head of Lettuce, Finely Chopped

    • 1 Red Pepper

    • 100 g Grated Cheese (Cheddar, Feta, or Cheese of Your Choice)

    • 200 g Greek Yogurt

    • Juice of 1 Lemon/Lime
    • A Pinch of Salt and Pepper

Instructions:

  1. Heat Butter in a large pan over medium heat. Add the Chopped Onion until softened.

  2. Add Minced Meat and cook until browned, breaking it apart with a wooden spoon.

  3. Stir in Garlic, Paprika Powder, and Cumin. Cook for 1-2 minutes until the spices release their aroma.

  4. Mix in Beans and Corn, then cook for an additional 5-7 minutes until the flavors combine. Season with Salt, Pepper, and Lemon Juice. Remove from heat.

  5. Combine Salad Chopped Lettuce and Grated Cheese in a large bowl.

  6. Add Greek Yogurt, a pinch of Salt, and Pepper and mix gently.

  7. Warm Tortillas in a pan or oven until soft and pliable.

  8. Assemble Tacos: Place a layer of the Meat Mixture on each Tortilla, then top it with the Salad.

  9. Serve immediately with your favorite sauces, such as Salsa or Guacamole. Enjoy!
